Any suggestions for wonderful recipe to use with Triple Ginger Snaps?

I bought this container of ginger snaps to use with a recipe called Chocolate raspberry tart but I don't have fresh raspberries anymore. I don't have any idea what else to use it with.

Or make ice cream sandwiches with lemon ice cream or sorbet.

I had a pumpkin cheesecake with gingersnap crust a few weeks back - absolutely wonderful!

or grate them fine, make cookie balls and roll them in the gingersnap crumbs before baking

Thank alot guys for the suggestions, I probably will try the cheesecake, so here's my....

question. What cheesecake besides pumpkin, will go best with this crust. I would have normally done the pumpkin, but I figure were over the Thanksgiving and Christmas festivities and we something different.

If you want to go savory, sauerbraten uses gingersnaps.

Also, they freeze really well, so don't feel forced to use them all now.
