Any thoughts on why I need to make this dish in "Glass" vs. foil? I was thinking of making this for

Don't do it! The wine will react with the foil & turn it all black/gray.

My mom made an aluminum roaster pan full of sweet potatoes with pineapple...very ugly...

I too would avoid the aluminum. Do you have a thrift shop near by, or a dollar store? . . .

If you have a dollar store or thrift store near, you could probably find an oblong rectangular glass pan, pie plate or ceramic plate or casserole in which to present your Orzo dish. Or maybe you have something like this in your kitchen that you never use?

Hmmm, I do but was trying to avoid having any dishes. They have gone to paper during this

challenging time....

You are making the sauce separately and then putting it

over the shrimp and orzo. I don't see any problem with it and am pretty sure I have heated things in a foil pan.
If you are still really concerned, line the pan with parchment paper.

Lining with parchment is a good idea or, again the dollar store: they have LOTS of . . .

nice plastic/melamine containers or bowls--at 1$ you can throw them away. . .

I think there is a Martha Stewart brand of parchment lined foil. maybe worth looking into for

something like this. might make fitting to a pan easier. otherwise I would just line with parchment as well.
