noticed the new bag of cornmeal is self rising. That means I don't add the baking powder right?

 
They were soooo good! I think I'm # 3 so should this recipe go

Had a bad sleep the previous night, got home and crawled into bed. Just saw your post now.

That recipe is definitely a winner. Try adding fresh kernels from an ear of bi-colored corn to it.

 
Okay! We now have empirical data. Just made batch #2 with the Yao Ming "larger"

okra and it turns out my corn meal is..."self-rising."

Who knew? Apparently not me. Maybe the overt joy at finally finding fresh okra impeded my already sucky reading ability while standing in the flour aisle. I know I did go for the cute antique southern looking label. How's THAT for scientific. Don't read that it's self-rising...but it had a cute logo.

Not realizing it was self-rising, I follwed the recipe and added the baking soda and salt for the first batch (cause I didn't realize I shouldn;t) and there wasn't a problem. In fact, I loved how the pancakes plump up. So I did the same this time, but left out the salt. Not a problem either way.

So...It's NO PROBLEMO if you only have self-rising corn meal.

Oh, and I only made half-batches each time, but used a whole egg because while I'm anal retentive, I'm not as anal retentive as Thomas Keller when it comes to half eggs.

 
Hummmm, I didn't use the baking powder because it was

self rising corn meal but it sounds like you liked the "extra" puffiness? I'll use it the next time. And I also cut it in half but I always have egg beater's around so I just used that to make 1/2 egg. John took a couple today for lunch along with his salad and really enjoyed them.

And I just omitted the baking powder and salt.

Also, as for the corn, Marilyn ignored my warning and used corn - the corn can cause some pretty explosive grease popping!

But aren't they addictive? I think I might try this as a base to add other ingredients but the okra just tasted so good in these.
