Anyone ever frozen Dawn's Creamy Enchiladas?

I'm going on a girl's weekend to Lake Norris, TN and am in charge of dinner Saturday. The hostess says people are usually starving when they come in from the lake (guess they don't bring snacks :0 ) and wants me to get dinner together quickly. She suggested we put something frozen (like Stouffer's lasagna)in the oven on time bake.

Lasagna's just fine but can't compare to the wildly popular dinner I'd already decided to make.

Made Dawn's Creamy Cx Enchiladas last night and froze in a disposable foil pan.

Hopefully the cream cheese in the enchiladas behaves itself!

Any suggestions on what temp to cook it at and for how long? -Tessie

 
I have, and they came out fine. I used flour tortillas but as I recall

some people who make these with corn tortillas, had problems with them. I think I let mine thaw and then baked them, but I can't remember. Probably about 45 minutes at 350. Everything is cooked already so you really just have to reheat them. I haven't made them in awhile, they sound good right now. Let us know how they turn out. Have fun!

 
Yeah, Dawn/Mo is the Dawn of Dawn's Creamy Enchiladas. Her original recipe...

...calls for flour tortillas. That's what I believe is causing your confusion. She makes them with flour and not corn tortillas.

They don't last at my house. We make 'em fresh, bake 'em and they disappear.

Norris Lake

Where will you be on Norris Lake? The lake actually runs over 120 miles and covers two counties in East TN. There are lots of towns and many marinas as well as private homes on the banks. It should be beautiful this time of year.

 
:eek:) Just meant that I didn't realize Tessie wanted to freeze them. I thought

she was just asking if anyone made them, and that Dawn_MO had answered "I have". I am easily confised and confused, all at once ;o)

 
Norris Lake & the frozen enchilada update

We were on Deerfield Cove. Never been there and just loved it. Spent all day Saturday boating and floating smileys/wink.gif The moms-gone-wild weekend was a huge success!

Anywho, made the enchiladas with corn tortillas instead of flour because in the past the flour ones have sucked up lots of the moisture if it needs to be transported (not served right away). Also made my own salsa verde which may have needed more liquid. The girls said they were good but compared to the way I usually make them they were like apples and oranges. Won't freeze again.
