Anyone have a good recipe for baked "fried" chicken?

Here is one, I posted this about 2 yrs ago, hope you like it smileys/smile.gif

OVEN-FRIED CHICKEN


PREHEAT OVEN 450◦

Ingredients:

1 ¼ cups Italian-seasoned bread crumbs
¼ cup Parmesan cheese, grated
½ cup mayonnaise (can be fat-free)
¼ teaspoon salt (can eliminate)
½ teaspoon poultry seasoning
¼ teaspoon red pepper
¼ teaspoon celery salt
1/8 teaspoon black pepper
1/2 teaspoon of dill
1 TABLESPOON dehydrated onions (*optional)
4 to 8 skinned and boned chicken breast halves

Step 1

On a plate, stir together breadcrumbs and Parmesan cheese.

Step 2

On a second plate, add mayonnaise. Add spices to the mayonnaise and mix together.

Step 3

Grease 13 x 9 baking dish with vegetable spray, set aside, or... use a cookie sheet covered in aluminum foil ~ I prefer this

Step 4

Dip chicken breast into the mayonnaise mixture, then dredge the mayonnaise coated chicken breast in the bread crumb mixture, then place in greased baking dish. Repeat until all chicken is done.

NOTE: do not over coat the chicken in bread crumb mixture; over coating does not make the chicken taste good. Lightly coat the chicken with the bread crumb mixture. Can shake chicken very slightly after dipping into bread crumb mixture... but lightly coat entire chicken breast evenly.

Step 5

(optional) Sprinkle dehydrated onions over prepared chicken breasts. Can use more or less of the 1 tablespoon of the dehydrated onions.

NOTE: Though it is optional to use dehydrated onions, it does enhance the flavor of the southern oven-fried chicken.

Step 6

Bake @ 450◦ for 20 minutes or until chicken is done, golden on top; onions may be blackened

FRIED CHICKEN

6 chicken drumsticks -- skin removed
6 chicken thighs -- skin removed
2 cups Italian bread crumbs
1/2 teaspoon garlic powder
1 tablespoon dried parsley
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 cup grated Parmesan cheese
Skim milk -- for soaking chicken

Soak the chicken pieces in very cold skim milk in the refrigerator, for at least 15 minutes. Combine all dry ingredients in a large plate or pie plate. Coat each piece of chicken with the crumb mixture, making sure to cover all areas of the chicken. Place chicken on a jelly roll pan that has been sprayed with Pam or wiped with olive oil. Preheat your oven to 375 degrees and bake your chicken for approximately 45 minutes for breast and 60 minutes for thighs. Serve at room temperature.

Mom's Baked Fried Chicken & Gravy

Amount Measure Ingredient -- Preparation Method

Chicken1 whole chicken, cut into parts
milk
1/2 cup (1 stick) butter
1 cup flour
1 Tbs seasoned salt
2 tsp paprika
3/4 tsp pepper
1/2 tsp saltGravy2 Tbs chopped scallion
1/2 cup chopped fresh mushrooms
3 Tbs butter and drippings from baking dish,
-- combined with scraped up crispy bits from chicken
2 Tbs of the leftover flour seasoned for
-- chicken preparation
1 cup milk
1 chicken bouillon cube (optional)
Chicken
1. Soak chicken in milk to cover for 20 to 30 minutes. Spray a baking dish
(one that will accommodate all the chicken pieces comfortably in one layer)
with nonstick vegetable-oil spray.

2. Preheat oven to 400°F.

3. Put the butter in the baking dish and heat it in the oven until the
butter melts. Mix flour and seasonings together in paper sack or plastic
baggie (1-gallon size). Shake each piece of chicken in seasoned flour. Place
chicken pieces, skin-side down, in baking dish. Bake for 20 minutes. Turn
chicken over and bake an additional 20 minutes or until cooked through and
crispy. Remove chicken and set aside in a warm place.
Gravy
1. Sauté the scallions and mushrooms in the drippings over medium high heat,
until soft. Mix the seasoned flour with milk first until you see no lumps.
Whisk milk mixture into the sautéing onions and mushrooms. Taste and add
bouillon cube, if desired (You may want to use additional milk if you do).
Boil until thickened to preferred consistency. Put into a gravy dish and
serve alongside the baked chicken.

Comments: When cooking for my college roommates years ago, I discovered that
although tuna-fish casserole is consumed in millions of households, love of
mother's own must be imprinted during infantile nurturing. As my friends
summarily banished all my childhood favorites, I concluded that a hankering
for mother's recipes could be used to distinguish genuine family from
interlopers (call it genetic tasting). But I soon forgot the recipes. So, it
took a call to Pam Ross, my sister and sole surviving mother in our clan, to
retrieve this cholesterol-boosting pleaser from our Mom. My nieces like it,
and it doesn't wear out the cook. Pam serves it with garlic mashed potatoes.

Another really good one from Epi...Spicy Oven-Fried Chicken

The only time this didn't turn out well, I used the chicken breasts that have been soaked in a salt solution, such as the ones in the 6 lb pack from Sam's. They came out with a bad texture, I think because the buttermilk brine on top of the salt solution they're treated with was just too much.

Spicy Oven-Fried Chicken

Amount Measure Ingredient -- Preparation Method

1 cup buttermilk
1/4 cup hot pepper sauce
4 boneless skinless chicken breast halves
1 cup dry breadcrumbs.
1/2 cup all-purpose flour
2 tsp onion powder
1 tsp cornstarch
1 tsp white sugar
1 tsp garlic salt
1 tsp salt
1 tsp pepper
1 tsp paprika
1/2 tsp cayenne pepper
2 Tbs olive oil

1. In a medium bowl, mix the buttermilk and hot pepper sauce. Place chicken
in the mixture to coat. Cover, and marinate in the refrigerator 8 hours or
overnight.

2. Preheat oven to 350 degrees F.

3. In a separate medium bowl, mix dry bread crumbs, flour, onion powder,
cornstarch, white sugar, garlic salt, salt, pepper, paprika, and cayenne
pepper. Thoroughly coat the chicken in the bread crumb mixture.

4. Heat the olive oil in a medium skillet over medium heat, and cook chicken
5 to 7 minutes on each side, until lightly browned. Transfer chicken to a
medium baking dish, and bake in the preheated oven 30 minutes, until no
longer pink and juices run clear.

a TIP that I read & tried was to toast the bread crumbs (specifically panko) ahead of time which ...

provided more crunch & boosted flavor. I did it on fish,

 
WOW! I didn't know panko could get MORE crunchy... you must have good teeth smileys/smile.gif

 
I am a panko convert..I don't use breadcrumbs on my chicken cutlets any longer and...

something else I do is add grated parmasean cheese to the panko. Not only is it very crispy but panko absorbs less oil.
