Anyone have a good recipe for Sugar Free Fudge?

No help here on SF, but did I ever tell you I finally figured out what I was doing wrong with your

fudge?

Years ago I tried making it and the stuff keep oozing fat. I was using Belgium Callebaut--not only is it coveurture, but it has a higher percentage of fat than chips. So I thought that was my problem. Then I tried following your EXACT ingredients...and it was still oozing fat.

Then both Traca and Pat in NoCA posted articles about over-heating chocolate. Turns out my chocolate was simply too hot to add the butter to it. That's all it took...waiting until the melted chocolate had cooled down to 110 degrees (I think) and then I could add the butter, whip it up and no problem.

So that's problem solved. Now I'm still working to lose all the fat I put on testing it over and over and over again.
