dip served in Middle Eastern restaurants or the paste? The paste is made from grinding sesame seeds. Thats it.
The dip has crushed garlic, water (here you have a fun chemical reaction: when you first add water and stir it in the mixture will become VERY stiff, continue stirring and it will start flowing again), salt, pepper/hot sauce, and parsley is optional.
