Anyone made Red Velvet Cake Balls? (see link)

Looks like an interesting site, but no, never made the red velvet cake balls. I made

chocolate cake balls once, and used canned frosting. I think you could pretty much use any frosting that you'd like.

I love the Trick-or-Treat cake pops at this site, too!

I have made them several times

I have found that a whole container of icing was too much. I end up using about 1/2 - 2/3 of a container. Also, I prefer using chocolate cake. The red velvet is too sweet not to mention your hands look like you've 'gutted' some thing. I use golves now not matter what type of cake i use. I first did this a christmas following some of bakerella's ideas tree, santa hat, reindeer, etc. for gifts and then again at easter. However, I am not as talented or artistic as bakerella and the pics will never be shown smileys/smile.gif

I have also done just the balls.

People go crazy over them.

I don't see why you couldn't use your own home made icing - just more work for you.

Aw, thanks hon. But I don't think my baking ego could take culinary failures I need to...

experience in order to write these type of posts.

I agree - have made these 3 times and you just don't need that much frosting -

too much will destroy the 'cake' texture. I've also done it with chocolate and yellow cake, never with the red velvet, tho it sure looks striking.

Thanks all for the good info!

I was going to make these last night for a birthday at work today. One screaming headache later, I just made cinnamon shortbread because it was quick and easy. Plus, it goes with coffee and my company is allll about the coffee.

I was thinking the red velvet might be fun for Halloween if I used white chocolate on the outside to make them look like eyes.

I can't handle the taste of canned icing and to me the couple of minutes it takes to make an icing is well worth the trade-off in flavor.

It sounds like I may just need enought to hold it together. But if I make these I'll take Marilyn's advice and weight it to ensure they won't smoosh.

Maria, try half the amount and test a chilled ball. You can always add more, but you'll be

visiting the Sex Ed classroom if it gets too mushy and you can't control the shape.
