I am hooked on Trader Joe's candied walnuts and pecans. They are just a little sweet with some salt to them and are very, very fresh. I have been making a salad with baby greens, candied nuts, chopped (lightly sweetened) sour Morello cherries and goat cheese that adore and am hooked on the nuts now as well, just by themselves; they are very satisfiying.

ISO: a recipe for candied nuts like Trader Joe's, not too sweet! They are absolutely delicious.

 
Mistral, I haven't had TJ's (they aren't HERE!), but Michael Chiarello's candied

walnuts are amazing. And really easy to make...I'm talking

1 minute to boil to lose the tannins
20 seconds to toss in powdered sugar
1 minute to fry in peanut oil
10 seconds to toss in his wonderful spicy seasoning.

I've made 6 pounds of these in one evening for gifts. 8 oz in a cello bag tied with a fru-fru ribbon and some ornament makes a lovely gift. I usually attach a small container of the spice mixture and the recipe along with it.

I just tried them and yes they are delicious. Made a Fall Salad

by Tyler Florence and wasn't up for doing my own. They were so delicious - very crunchy and not too sweet. I hate the ones that are sticky sweet and get stuck in your teeth.

 
Esparto is just a sneeze away from me! Like 20 minutes up the road!

It is so small, not really even an entire blink will get you through "town". I'll have to check out Haag's. But I buy my walnuts from a former colleague 5 min from my house $0.80/lb plus all the free Hachiya persimmons I can carry!

 
They are organic too (they don't spray). But they are small-time & don't ship. They were good this

year,according to my dad, he shelled only 80 pounds this year for family members. Let me know next year & I'll see if I can ship some to you. However the shipping will be WAY more than the nuts! My dad shipped shelled walnuts, maybe less than 10 lbs for about $70-80 !

Candied Pecans

1 egg white
1 T water
4 1/2 cups pecan halves
1 cup sugar
1 t cinnamon
1/2 t salt
In large bowl, beat together egg white and water until blended. Add pecans and stir to coat well. In small bowl, mix sugar, cinnamon and salt together. Pour over pecan mixture; stir well. Spread on baking sheet. Bake in 300º oven for 20 minutes. Remove from oven and stir. Reduce oven to 250º and bake an additional 30 minutes.
I made these last year and I couldn't stop eating them!

 
REC: Baked Boston Peanuts

I am not sure why it says it makes 4 cups when it has only 2 cups of peanuts, but it is a good recipe. I have only made it with peanuts, but I didn't find them overly sweet. You might give this one a try and adjust the sugar amount for your taste.

This is a nice gift in a pretty jar or tin.

30 min | 20 min prep

4 cups

2 cups raw Spanish peanuts
1 cup sugar
1/2 cup water
1 teaspoon salt
Preheat oven to 350 degrees.
In a heavy medium skillet,cook peanuts,sugar and water over medium heat until all liquid is absorbed and peanuts are coated with sugar (about 20 minutes) Sprinkle with salt.
Transfer to greased jellyroll pan.
Bake 10 minutes,stirring after 5 minutes.
Spread on aluminum foil to cool.
Store in airtight container.
