1. Smitten Kitchen's Blueberry coffee cake-YUM!!! We loved it.

2. Leite's Culinaria hazelnut brownies-really good

3. Puff pancake with fresh berry compote--think I didn something wrong or the recipe was not right as it turned out like a crepe, but we piled on the berries and ate every last drop smileys/smile.gif

4. The tomato paella that someone here posted. I didn't have pimenton paprika so I used Spanish smoked paprika. Not sure about it. Will have it again tonight as someone mentioned it is better the next day.

5. Grilled flank steak with mango and watermelon chutney from Cooking Light. Really good!

6. Dried apricots smeared with goat cheese, topped with toasted walnut halves then drizzled with honey.

1. Tried a new Asian Fusion restaurant in OKC on Friday and enjoyed the food. After dinner I went to Sprouts then met my husband at the racetrack and watched his horse win a race.
2. Made Salisbury steak, mashed potatoes, gravy, and peas for my husband on Saturday. The gravy started with a pile of onions caramelized in butter, flour to make a roux, beef broth and drippings for the liquid, blitzed with the immersion blender and finished with a bit of brandy. It was the best gravy I've ever made.
3. For the mashed potatoes I simmer my potato cubes in a mix of milk and cream then rice the chunks back into the liquid. Works really well, even when you use a small saucepan and have a milk boil-over. Thank goodness for an easy-to-clean induction cook top.
4. I had sauteed eggplant with raw tomatoes and basil pesto. I will probably have this or miso glazed eggplant at least weekly while eggplants are in season.
5. Discovered that the bacon I bought on sale recently was cheap for a reason. I was going to make the bacon wrapped onion rings until I saw the amount of fat on the bacon. I trimmed 2 pounds down to about a pound and a half and made bacon jam instead.
6. Still haven't hulled the big bag of black-eyed peas I bought last week. Maybe tomorrow!

1. Pounded boneless, skinless chicken breasts flat then topped with proscuitto, grated gruyere, a few fresh thyme leaves then rolled the chicken breasts up and dipped in flour (seasoned lightly with salt and pepper/garlic powder/paprika/dried Italian seasoning), then egg, then dry crumbs and pan-seared briefly then popped the skillet in the oven for the breasts to finish cooking. Was delish.

2. Neighbor brought over 6 fresh eggs from their backyard chickens so I put them to use in breakfast tacos made with corn tortillas, ground Mexican chorizo, onion, grated sharp cheddar and monterey jack cheese --- topped with chopped avocado and fresh pico de gallo (chopped tomatoes from the garden, garlic, onion, jalapeno, cilantro, squeeze of lime). Yummeee!

3. Made Cilantro Potato Salad again (good stuff) this time using a colorful trio of golf-ball sized yukon golds, purple and red potatoes. Had about 3/4 cup leftover fresh corn kernels on hand so I tossed them into the salad at the very end. Loved the flavor, color and crunch the corn added to the potato salad.

6. As it was reaching 85 degrees yesterday afternoon I quit gardening to kick back on the patio with an iced tea and browse through the 22 cookbooks I just acquired. So fun to wile the time away dreaming of new things to cook.

1. old fashioned steak dinner Friday nite, and I didn't have to cook a thing. our fishing guests brought all the fixin's. yum
2. the fellas went Silver salmon fishing at 4 dark thirty. miserable day. blustery windy rainy. they came back early and empty handed.
3. good thing I had moose stroganoff ready for them. it was yummy and warm and filling. served with noodles and a big salad and garlic bread and.......
4. Tomato Tatin that Traca posted awhile back. it's in the link T&T. 3 people have asked for the recipe. so good! I didn't have herbs de Provence, so I sprinkled with oregano, rosemary, and a bit of tarragon which was also in Bill's stroganoff. I found that baking it in the little Breville convection oven took less time and no broiler needed. when I baked it in the regular oven it took longer and wouldn't brown up enough so we ran it under the broiler. still very nice.
5. homemade icecream finally eaten. made it a few weeks ago and we were too full and tired to eat it then. it was an easy cheesecake ice cream recipe and then I swirled a compote of plums/rhubarb/raspberries through it before putting in the freezer. it was yummy.
6.harvested some sugar snap peas(for DH, not me, so allergic) broccoli, and found 4 yellow squash that will be ready this weekend and more blossoms. found 2 baby cauliflower too. you really have to move the big old leaves around to find the treasures.

Traca's tomato tarte tatin sounds great. Thanks for reminding us about it. Was just eyeing

a Tomato Gratin with Parmesan Crumbs in the Gourmet cookbook, but this tatin is calling me louder, LOL -- unfortunately I don't have plum tomatoes but maybe one of the small meaty-type tomatoes in the garden will work. Hmmmm.

Moose stroganoff sounds intriguing. Do tell, what does moose taste like?

 
That gravy sounds great - I love homemade Salisbury Steak, I usually use the recipe from

the Betty Crocker Red Cookbook.

How do you prepare your miso eggplant? That sounds really delicious!

 
I didn't have plum or roma toamtoes either, so I just cut big tomatoes in eighths and fanned them

around the baking dish. worked out just fine. once they are nice and roasted you can't really tell what they started out as. the roma halves do look a bit more uniform. I thought about using the cherry tomatoes I have, but they wouldn't be "meaty" enough for the crust on top. moose done this way tasted just like beef.

 
The Tomato Paella is a simple dish and what we like about it is that it is all about the delicious

garden tomatoes, in season now, cut into thick wedges and roasting on top of the rice, infused with saffron and smoked paprika.. It is so beautiful when brought to the table with fresh parsley sprinkled all over it. If you want more bang, try adding some lemon juice to the rice, or drizzle a good balsamic at serving. It took me awhile to get used to it too, but I loved it at first site. I'm a tomato nut.

 
I use my chive blossoms in iced tea, scrambled eggs, salads, baked potatoes, potato salads...

as a garnish. They are so pretty.
