Appetizer: Shrimp & Red Pepper Aioli

The Red Pepper Aioli makes a nice change from the usual cocktail sauce.

1 lb cooked shrimp, tail on

Serve with Red Pepper Aioli

Garnish with fresh green herbs & lemon and/or lime wedges.

Red Pepper Aioli

1/3 cup mayonaisse (low fat is good)

1 small roasted red pepper, coarsely chopped

1 clove garlic, finely minced (use more garlic if desired)

2 tbsps good olive oil

1 tsp fresh lemon or lime juice

salt & pepper to taste

dash red pepper flakes if desired

Blend ingredients well in a mini processor.
