Had these at a Shiva I attended last week (in Judaism, "Sitting Shiva" refers to a tradition of family members gathering in one home (usually the home of the deceased) where they receive friends and acquaintances; there is also a short service. People always bring sweets to set out).
I made these last night - so delicious.
Apple Crumb Bars:
21/4 C Flour
11/4 C sugar, divided
1/2 t baking powder
1/2 t salt
1 C butter
2 egg yolks
4 cups sliced apple
1 t cinnamon
1 cup powdered sugar
11/2 T milk (I always use heavy cream)
Combine the flour, 1/2 C sugar, baking powder or salt. Cut in butter until crumbs are the size of peas. Stir in egg yolks. Press half of mixture into bottom of a 9x13 pan, and reserve the rest. Combine apples, sugar and cinnamon; place apple mixture over crust in pan. Sprinkle with remaining crumbs. ake at 350 for 45 minutes or so. Cool and drizzle with thin icing of powdered sugar and milk.
