Wouldn't that absorb grease and other stains easily? Or maybe it's one of those old slate boards. Might be fun for a cheese board.

 
I've found the best thing is to 'pre-oil' things like that

by putting a coating on first, you get an even coating then the oil from other things won't make as noticable stains on them. Even if it is the slate kind - the slate can also get oil stains.
