Be careful about the type of cheese. I used an Irish and it turned out too bitter against the sweet

apple taste. On the other hand, Tillamook cheddar worked fine grated on the crust.

I'd like to try "Pushing Daisies" version of pear pie with gruyere crust.

Try horseradish cheddar-the kind Costco sells- it is great in an apple pie crust
