Apple Shortbread Cake
6 to 8 servings
1-1/4 cups all purpose flour
1 teaspoon sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup (1 stick) butter, cut into pieces (room temperature)
1 egg yolk
2 tablespoons milk
6 tart apples, peeled and thinly sliced
Cinnamon Topping
3/4 cup sugar
2 tablespoons butter
1-1/2 tablespoons flour
1/2 teaspoon cinnamon
Blend ingredients until crumbly
Preheat oven to 350 Degrees F. Butter 9-inch round cake pan. Stir first 4 ingredients into large bowl. Beat in butter. Add egg yolk and milk and blend until smooth. Turn into pan spreading evenly to edges. Arrange apples over top. Sprinkle with Cinnamon Toping. Bake until golden, about 45 minutes. Serve warm or chilled.
Looking for something different pulled some old Bon Appetit Magazines and while reading found this recipe and must try it...it is from Bon Appetit November 1980 in the Too Busy to Cook section....
