Apple Slab Pie from SmittenKitchen - took her idea and made tweaks

This was a HUGE hit!

I used her idea but changed the filling. Instead, I reduced 3 cups of apple cider to 1/2 cup and replaced the cornstarch with instant tapioca which I pulverized. Used half Granny Smiths and half honey crisp. Spices stayed the same. Couldn't stop eating it!

Next time I'm using the grains of paradise smileys/smile.gif

My mom used to make this when I was a pup, but we always just called them Apple Slices. YUM!

I like tapioca instead of cornstarch but not the round 'globs' of tapioca

I have a recipe somewhere that suggested doing that and it works really well

Geeze, cheez, this would be cheaper than buying that dang Minute Instant Tapioca. . .

That stuff is expensive! And you can't make very many pies with it.

Me too please, I would also like to know how and where you added the reduced cider and what kind of

of tapioca. Did you just put the tapioca in the food processor and turn it into power?

YAH!!! Guaranteed oohs and ahhhhs. When you reduce the cider...

It takes about 20 min and goes very quickly at the end so watch it smileys/smile.gif

Another hint: I did this a lot when I had to make a sugar-free apple pie. Try to

use organic apple juice since its reduced so much that the end syrup should be as 'apple-y" as possible--minus all other chemicals and preservatives.

Also, it keeps a LONG time in the refrigerator, so you can drizzle it on sauteed apples for pancakes or oatmeal.
