Apricot/banana emergency

I used to frequent Gail's at Epi. I hadn't been around for a while, and when I recently went back, none of the names looked familiar and the tone was much different... so I looked further back and found reference to this site- I am very glad that I found all of you!

Anyway, I have a number of very ripe apricots, and a quantity of VERY ripe (almost black) bananas. I need to use them today. I was thinking of an apricot coffee cake or something similar, and banana bread perhaps, but would welcome other ideas as well.

Does anyone have any ideas or favourite recipes? I was thinking of using Michael in Phoenix's coffee cake recipe but putting apricot halves on top instead of the struesel.

I am also consumed by an overwhelming urge to bake lately lol... I may just end up freezing the bananas and making something with the apricots.

APRICOT UPSIDE DOWN CAKE

Topping:
3/4 cup sugar
1/4 cup water
1/4 cup butter
8-9 medium apricots, halved and stoned

Cake:
4 eggs, room temperature
2/3 cup sugar
1 tsp vanilla
1 cup all purpose flour
1 tsp baking powder
1/4 cup butter, melted

1. To make the topping, place the sugar and water in a saucepan over low heat and stir until the sugar is dissolved. Increase the heat and boil until syrup is a golden brown color. It would take about 5-8 minute. Remove from the heat and stir through the butter.
2. Pour into a well greased 8" round cake tin and top with the apricots cut-side down. Try to place them very close together in the caramel.
3. For the cake, place the eggs, sugar and vanilla in the bowl of an electrics mixer and beat for 8-10 minutes or until thick and pale.
4. Sift the flour and baking powder over the egg mixture and gently fold through. Fold through the butter.
5. Spoon the batter over the apricots and bake in preheated to 325F oven for 35-45 min or until tester inserted in a middle of the cake comes out clean.
6. Allow to stand for 15 minutes then invert the cake onto a plate. Serve warm or cooled.

You can make nlb's wonderful Indescribably Delicious Banana Bread (m)

I posted this recipe on Nancy's-Kitchen site, of course giving credit to nlb, and it was amazing how many people made this and absolutely loved it. In fact they are still requesting the recipe.

I cut the sugar down to 1 cup, added fresh blueberries and ghiradelli semisweet chocolate chips, and baked it as 6 mini-loaves. I have to say- this is an amazing banana bread recipe! Exactly what I have been looking for. Thank you for pointing me in that direction.

Now for the apricots... I think I've decided to use the recipe for raspberry-topped lemon muffins, but baked in a cake pan and covered with apricots instead of raspberries.

Yes, glad you found us. I recently froze some banana "insides"...

I know the skin turns black if you don't peel them first, so I peeled about 3 lbs. of reeeeally ripe ones and froze them in a plastic bag.

Next time I want banana bread, I'll just thaw them out. I like nlb's bread with chocoloate chips in there.

It's so nice to have found you. I remember a lot of the names here, from the old gail's- but without all the flaming etc... how novel! (LOL) Very, very refreshing, and yes, thank you Mimi and FK.

 
I wasn't sure about adding both blueberries and chocolate chips...

However, my current indecisiveness left me no option lol. I will probably add fewer of each next time though, as it was a surprisingly tasty combination but I added so many of each item, that the banana bread is more of a binder for them than anything else. I did make two mini loaves with no additions so I was able to taste how decadent the bread alone is.
