Apropo leftover chicken from soup - anyone have a special recipe that they use? I have more chicken

than I know what to do with. I will make NLB's noodle casserole for the family this week. But I have a lot - any kind of recipe would be appreciated.

Elaine, I can never get enough of curried chicken salad. I know that's pretty boring...

...but it disappears around our house fast as lightning.

Dawn/MO's creamy enchiladas comes to mind. That will use 2 to 4 cups of cooked chicken, depending on how many you make.

We keep poached, shredded chicken in the fridge for additions to soup and as an instant BBQ chicken sandwich when mixed with sauce and quickly heated. Same way with chicken tacos.

A BBQ sandwich, as Michael mentioned. I mix the chicken with BBQ sauce, then heat it in

an open faced baguette with melted extra sharp cheddar on top.

Also, I do chicken fajitas, quesadillas, burritos, etc.

Sometimes I just add the chicken to a large mixed green salad with tomatoes, sweet onion, etc, and toss with a red wine vinegar/balsamic/Dijon vinaigrette.

Some other ideas:
Chicken fried rice, chicken Caesar salad, chicken chili, chicken pita sandwiches with a yogurt sauce, chicken tortilla soup...
