Photos and recipes from the Argentina Barbeque Dinner. It was so beastly hot that I grilled and served inside.

Grilled Vegetables

Prepare your assortment of vegetables and cut into serving pieces. I used zucchini, summer squash, asparagus, mushrooms, eggplant, slices of red onion, etc. Toss with olive oil. Grill.

 
Tomato, onion and basil salad

Slice red onion into thin slices and cut in half. Place in bowl of ice water for 2-3 hours with a 1/4 cup of sugar and a tbls. of sea salt. Drain.

Slice tomatoes. Garnish with sweet onions and basil leaves.

 
Cucumber Salad

Slice cucumbers and sprinkle with tablespoon of sea salt. Toss to coat. Let sit for an hour. Rinse. Drain. Toss cucumbers with lime juice, a sprinkling of sugar, and olive oil. Season with salt and pepper. Garnish with freshly snipped chives.

 
Russian Salad

Boiled potatoes
boiled mix vegetables
green onions
bacon
butter
Italian herb blend

Cook the potatoes until they are just done. Do the same with the mixed vegetables (more or less to your desired taste). Drain, place in ice bath, drain.

Meanwhile fry bacon, diced into bits in butter. When the bacon is starting to brown, add the green onions. When the bacon is crispy, pour the bacon-butter-green onions over the potatoes and vegetables. Add the Italian herbs. Toss to coat. Finish with just enough mayonnaise to coat.

 
Desserts: Copa Don Pedro and Alfajores

Ice Cream: We used homemade brown butter pecan
rich chocolate sauce
Dulce de leche (milk jam)
whisky
hazelnuts, chopped
black cherries, pitted
grated bittersweet chocolate
garnish: I used pirouettes and biscoffs

In sundae coupe: Layer dulce de leche, and chocolate sauce, scoop of ice cream, bing cherries, grated chocolate, dulce de leche, chocolate sauce, tablespoon of whisky. Repeat. Top with drizzles of chocolate sauce, another tablespoon of whisky, whipped cream, garnish, and sprinkles..

Alfajores--Argentine dulce de leche sandwich cookies

Somehow I missed getting a photo of these.

3 Tbsp butter, unsalted
2 Tbsp sugar
1 egg yolk
1 tsp lemon zest (fresh)
½ Tbsp brandy
½ c potato or corn starch
¼ c + 2 Tb flour
½ tsp baking powder
8 oz Dulce de Leche

1.In a medium bowl, cream butter and sugar with an electric hand mixer. Add the egg yolk, lemon zest, and brandy. Beat until smooth and fluffy.
2.In a separate bowl, mix cornstarch, flour, and baking powder. Sift the dry mixture into the butter mixture and beat over low speed until the mixture looks like even, wet crumbs.
3.Using your hands, knead the mixture just until it forms a dough that will hold together. Shape the dough into a ball and wrap it in plastic wrap. Place the dough in the refrigerator for at least one hour, up to 3 days, to let the flavor develop.
4.When you are ready to bake your cookies, preheat your oven to 350?.
5.Roll the dough ¼ inch thick and cut it into circles using a 1 ¾ inch cookie cutter (or the mouth of a shot glass), Re-roll any dough scraps and cut additional cookies. You should have 24 cookie dough rounds. Place the cut dough onto a baking sheet, ½ inch apart.
6.Bake the cookies for 12-13 minutes, until they are firm, but just before they start to turn a light golden brown. (These cookies are traditionally white.)
7.When the cookies are done, remove them from the oven and let them cool for about 1 minute on the baking sheet. Then, transfer the cookies to a wire rack to cool completely.
8.When the cookies cool to room temperature, spread Dulce de Leche on one cookie and top it with a second cookie. Press down gently and evenly, so that the cookies do not crumble.
9. Dip in melted bittersweet chocolate. Place on waxed paper to let chocolate set.

 
Cocktails and Hors d'ouevres

Yerba mate martinis:
Combine 1 cup water and 1 cup sugar in saucepan. Bring to a boil, stir to dissolve sugar. Remove from heat and stir in 1/4 cup yerba mate. Cool. Strain. Chill.

In a pitcher, add 1 quart of vodka, 1/2 cup yerba mate syrup, and fill pitcher with ice. Stir well. Strain. Serve neat in martini glasses.

 
Empanadas

Dough

1/2 cup of pork lard
2 cups hot water
2.5 pounds of flour
1 tsp. salt

Cut the lard into small dice, add to the hot water and leave until melted.

Make a well in the flour, add the pork water, stir to combine and make a smooth dough. Wrap in plastic wrap and refrigerate overnight.

Filling
1/4 cup pork lard
1 onion, diced
1 bunch green onions, diced
6 cloves of garlic ( or more to taste )
2.5 pounds of chicken thigh meat ( or beef ), minced
2 tablespoons of paprika
1 tablespoon of cumin
1-2 tsp. of dried chili flakes
8 chopped hard boiled eggs
2 cups of chopped green olives

Melt lard in large skillet. Fry chicken, onions, green onions until the meat is browned. Add spices and continue to cook for another minute. Cool.

Stir in eggs and olives.

season to taste with salt and pepper.

Divide dough into 24 portions. Roll each piece on a floured surface into a 6-inch circle.

Divide the filling onto the circles. Brush edges with beaten egg. Fold over, press the edges together, and fold the edges up again and crimp to seal the filling into the dough.

Brush empandas with egg wash and bake until golden brown.

Mantequilla Marr

For 1 quart:

1/2 pound butter
3/4 cup pecans, diced
2 cups whole milk
3/4 cup whipping cream
1/2 cup brown sugar
1/4 cup light corn syrup
1.5 tablespoons of cornstarc

Melt the butter over medium low heat until it turns dark brown. Gently pour the clear, brown liquid off the top into a container, leaving the browned bits on the bottom. Use the browned clarified butter for your Indian cooking. Set the pan with the browned butter bits aside to cool.

Toast the pecans. Set aside.

Add milk, cream sugar, syrup and cornstarch to the pan with the browned butter bits.. Set over medium low heat and stir until the sugar is dissolved. Continue cooking, whisking, to make a thickened custard. Pour into container and refrigerate overnight.

Prepare the ice cream freezer. Stir the custard and pour into the canister and freeze. When ice cream is finished, add the pecans and churn to combine.

Place in a container and store in freezer.

 
Chimichurri

1 onion, finely diced
5 cloves garlic, minced
1/2 tsp dried chili flakes
1 tsp. dried oregano
1 tsp. paprika
1 tsp. salt
1 tsp. black pepper
1 tblsp lemon juice
1/3 cup red wine vinegar
2/3 cup olive oil
1 cup freshly minced Italian parsley
1/2 cup freshly minced cilantro

Combine. Let mature for at least a day. Serve with grilled meat.

 
Salsa Criolla

1 onion, chopped
1/2 cup white wine vinegar
1 tblsp. salt
2 cloves of garlic, minced
2 red bell pepper, finely diced
2 green onions, finely diced
1 beefsteak tomato, finely diced
1 cup olive oil
1 tblsp. finely minced parsley
1 tsp. black pepper
1 tsp. cumin

Combine, let sit for 1 day to mature.

 
Only! LOL

We are so happy with our new (old) dining room table that seats 10!!! The old table only sat 6 and it was very frustrating We purchased this 1930 dining room set from an estate sale for peanuts and this was our first 10-seater dinner party!
