with about 10 pounds of kale. Can I sub the kale in the chard and garbanzo bean recipe or do I need to travel for groceries, again?

Sorry, I can't help. Did some research, is it "baby kale?" If so, there seem to be

a few salad recipes. I think would work with your roasted garbanzo's. ((A few of my recipes have both kale and swiss chard together)) I also found a few that call for shredded kale, which is a different twist, in the event that your kale is larger, and not as tender. Lastly, just going through my cookbooks... 10lbs!! I definitely would find a way to use it. Most of the recipes call for a lb or two. I think it would be expensive to replace it.

Your menu above sounds wonderful!!!

Have fun, looks like the weather will cooperate!

Best,

Barb

Joe.... Great minds... Looks like we were posting at the same time. (like the blanching idea)

I used kale with this recipe - even skeptical DH had seconds!

I only had 1 bunch so I made a 1/2 batch following Barb's suggestions for including the stems, reducing the broth and cutting back on the oil (only used 1/4 cup)- we loved it. The kale cooked down quite a bit - I was thinking that I might like 2 bunches with 1 can of garbanzos if I made it again, even though the kale is "strong." I'll be looking for chard and plan to add shrimp the next time I make this! Colleen
