Actually, I take that back about the temps. I checked my REC: Leslie's Dad's Cheesecake

The temps in my cheesecake recipe are similar, so it's probably right.

Anyway, I haven't made this in ages, but I got it from my girlfriend's dad. It's a photocopy of his recipe, handwritten on a piece of lined folder paper, and she said the fussy instructions were so that the cheesecake would not crack smileys/smile.gif

Base:
2 packs graham crackers (plain or honey)
1/4 to 1/3 cup melted butter
9" springform pan

Finely crush graham crackers in food processor (or in a blender a few at a time. Stir with chopstick (motor off)).

Melt butter and add to crackers, mix in. Add additional butter until mixture is firm.

Place in springform pan and spread evenly on sides and bottom.

Bake at 425º for 5 minutes.

Filling:
5 8oz pkgs cream cheese
1 cup sugar
3 tablespoons flour
1 teaspoon vanilla
6 eggs
1 cup sour cream

Let all ingredients warm to room temperature.

Beat cream cheese, sugar and flour until very soft and light.

Add eggs one at a time, mix well.

Add vanilla, mix well.

Add sour cream, mix well.

Pour into prepared crust.

Bake at 425º for 15 minutes.

Lower temperature to 225º and bake for about 1 hour, until center is firm.

Shut oven off. Leave cake in for 1/2 hour.

Open oven door slightly, and leave cake in for 1/2 hour.

Take cake out, and cool at room temperature for 1 hour.

Refrigerate.
