I notice it doesn't say how long to bake these... just says 'until set'. Approximately how long? Thanks smileys/smile.gif

Judy's Nut Balls (Mexican Wedding Cookies, Russian Teacakes, whatever)

An old family favorite, my grandma called these Judy's Nut Balls for my Aunt Judy -- but my Aunt Judy hates that name! I forgot what she said she herself calls them. Most other people would call them Mexican Wedding Cookies or Russian Tea Cakes or one of the other myriad names for this type of cookie. I've had Mexican Wedding Cookie conoisseurs tell me that this was among the best they've ever tasted.

3/4 cup ground pecans

1 cup butter, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

2 1/4 cup cake flour

1/4 teaspoon salt

extra powdered sugar

Stir together pecans, butter, 1/2 cup powdered sugar and vanilla, mix well. Sift flour and salt, stir into nut mixture. Chill. Roll into 1-inch balls, then roll each ball 3 times in the extra powdered sugar. Place 2 inches apart on cookie sheet. Bake at 350 F until set but not brown.

Does anyone have a good recipe for those 'cookie-in-a-jar' gifts?

You know, where you layer in the ingredients and attach the recipe to the jar lid?

I'm checking "The Good Cookie" by Tish Boyle. Her Russian Tea Cakes

are slightly different.

Rolled 3/4" in diamater
Baked at 325 for 17-20 minutes
NOT POWDERED until they come out of the oven.
{this is how my mom did hers}

In "Baking by Flavors"by Lisa Yockelson, her Ginger Butter Balls

use scant Tablespoon of dough, rolled into ball.
Baked 350 for 12-16 minutes.
Rolled in powdered sugar afterward.

in the book it states "8 to 10 minutes or until set but not brown"

same recipe but in the book it is "Judy's Pecan Balls" page 83

Taste of Home has a magazine out right now that are all gifts from

the kitchen. There was a really pretty photo of some layered recipe with red hots layered in there. The publication is on the magazine racks now and runs about $10. I plan on picking it up at Sam's Club at 40% off the listed price. There looked like some cute ideas in there.
