Asian Green Beans

½ lb. green beans

½ c. water chestnuts, sliced

½ c. fresh mushrooms, sliced

1 clove garlic, crushed

1 tsp. sugar

2 1/12 tsp. soy sauce

1 tsp. vegetable oil

1 tsp. sesame oil

½ tsp. salt

¼ tsp. pepper

2 tsp. sesame seeds, crushed

Slice fresh beans diagonally. Stir-fry green beans, water chestnuts, mushrooms and garlic in oils. Add remaining ingredients. Cover and cook until beans are tender, about 4-5 min.

Serves 4

 
Speaking of green beans, has anyone every seen the "yard-long" variety...

of them (seeds) in the stores now? I think they are also called "asparagus beans".

 
They are more common in Hawaii than "regular" green beans are and are....

Delicious stir-fried, sauteed, steamed. They are tougher than other beans but the flavor is wonderful. I like them stir-fried with sesame oil, garlic and a little chili pepper oil.

 
I planted "haricots Vert" last year as I love beans in France. We have never had such outstanding

beans. I've dedicated about 1/2 my garden to them this year. And they're so easy to grow and produce large crops.

I have some chili oil and now I have something to use it on-green beans, thank you, Cathy...

Marge, I'm not sure what haricots Vert are but I'll have to see if there are any seeds at Rollin Oats. I love French food. Thank you for your kindness, Marge!!!

 
I passed them over at the seed counter...

Bean seeds had always reminded me of a 3rd grade elementary school project I did (ohhhhh, so long ago), but with your ringing endorsement of them, maybe I will plant them this year - IF I can find room! :eek:)

 
They are the slim & tasty version of beans. 'Marseille' is one version, 'Gourmand' is another

but they are so robust in flavour.

I planted one row & 2 weeks later another. And every 3 days, I had a side dish of veggies for the 2 of us.

the N.A. version tastes likes grass. But these are so good that we can't wait for them to mature...that takes only about 2 days.

I hope you do try them and love them aa much as we do.

 
We just bought some last night Dawn, it's Bybee's Finest Organic Petite Whole Green Beans

I buy when I can find them - sometimes Costco has them, sometimes they don't.

We love these as well, usually just steam them or do a quickie stir fry.

I was surprised to see FRESH haricots verts at Costco. Unfortunately,

there wasn't much flavor. I've had such mixed results with this wonderful, slender, tender green bean that I think it just doesn't travel well. Frozen or grow-your-own are the best alternatives.
