Very pretty but oh so fussy to make. Coincidentally I made a pasta salad last evening
Not an Asian version though. It was sooooooo hot and still and 100% humidity. Just awful. I didn't feel much like cooking (except for the part where I could stand in front of the open refrigerator) so I pulled out stuff to assemble: mushrooms, black olives, hard salami, broccoli, carrots, red onion, garbanzo beans, cilantro, salsa, a bottle of Kraft spicy ranch dressing (yup, even I cop out once in a while). As I cooked bowtie pasta I also blanched the broccoli. I dumped both into ice water then got rid of the ice and the water and had a very cold metal mixing bowl (Grandma's bread-proofing bowl) to put everything in. I sliced, chopped and dumped all of it together- adding salsa to the dressing to zip it up. Put in the fridge for about 20 minutes and plated on splayed lettuce leaves. Delicious! I think I spent a whole 15 minutes on it. Then we had a lovely dinner under the fan while we watched "Miss Fisher's Murder Mysteries".
