This salad looked very pretty in the book. Haven't tried it yet.
ASPARAGUS SALAD WITH PROSCIUTTO
Savory Vinaigrette
1/3 cup olive oil
2 Tablespoons white wine vinegar
½ teaspoon Dijon mustard
1 clove garlic, minced
¼ teaspoon salt
¼ teaspoon pepper
Asparagus Salad
24 fresh asparagus spears
12 thin slices prosciutto cut in half crosswise (about 8 oz)
24 thin slices red bell pepper – one pepper
8 cups torn mixed salad greens
1 tablespoon minced fresh basil
½ cup red cherry tomatoes
2 large hard boiled eggs, grated
Prepare vinaigrette.
Salad: Steam asparagus 3 – 5 minutes in salted water. Drain, rinse with cold water – drain again.
Brush asparagus with vinaigrette - wrap a prosciutto strip around the spear and then wrap a thin red bell pepper slice. – coming about halfway up the asparagus tip. Repeat with all asparagus.
On a large platter arrange greens that have been tossed with half the vinaigrette and basil. Arrange the asparagus bundles on top. Sprinkle with grated egg. Scatter tomatoes about. Serve remaining vinaigrette on the side.
