1 3/4 cups lemon basil (or other herb)infusion

3 1/4 cups sugar

3 TBS lemon juice (or lime or rice vinegar or tarragon vinegar or...depending on the herb infusion

1 pkg. liquid pectin

combine herb infusion, lemon juice (or other acid), and sugar. Heat, stirring until sugar is dissolved.Bring to rolling boil over moderate heat.

Add pectin, boil for 1 minute, pour into jars, seal with lids and rings. Processin boiling water bath 10 minutes.

I have used different basils; lemon, cinnamon, etc. with different acids...experiment!

 
herbal infusion directions

Take herb cuttings- basil, lemon balm, thyme etc.
strip leaves and cut up stalks (if the stalks are tender and have aroma). cover about 4 cups, slightly packed leaves, etc with water.Bring to a boil, take off heat and cover. Let steep at least 15 minutes.

Strain liquid through fine strainer, cheesecloth, etc.

this can be boiled down further if not strong enough, but longer steeping times can make it bitter.

 
if it doesn't jell, refrigerate it....lots of uses for the jellies...

I love peanut butter and lemon basil jelly sandwiches... use as a glaze for meat (after cooking)..on cracker with cream cheese as appetizers....a syrup for a spionge cake....
