Aunt Dot's Qick-Mix Laof Cake...very easy and tasty.

2 eggs

4oz very soft butter

3/4 cup sugar

1 1/2 cups flour

1/2 cup milk

1/2 tsp salt

1 tsp almond essence

2 tsp baking powder

In mixer beat eggs, flour, sugar, soft butter, salt, almond essence and milk for three mins

Stir in sifted baking powder.

Pour batter into buttered loaf tin (the silicone ones are super)

Bake at 350* for 50 mins. Let sit in tin for 15 mins

Drizzle water icing over cooled cake or mix icing sugar with cream and drizzle that over.

The almond flavour seems to be heightened with the water icing...this goes a wee bit crunchy.

Yes Colleen.....

Remember to sieve the icing sugar 1st and then stir in the water in small tsp increments.
It is surprising how much icing sugar to 1 small tsp you would need.
The same with the cream, add a little at a time.
It suddenly goes runny, too runny to top the cake. (Just add more sieved sugar)
Cake should be quite cool when you top it and the icing should be thin enough to drizzle down the sides a bit.
Generally I go back and add a second coating on the top as I like the white colour rather than a transparent topping.
I have never actually measured but I would hazard a guess, I use about a 3rd of a bag of icing sugar.
