Avocado Toast Ideas? It's time for the Spring Garden Tour again! We were promised a case of avocados

I blindly added "Avocado Toasts (v)" to the menu. The (v) is for vegan--always a challenge.

I probably should have just promised guacamole and chips but I want to be a bit upscale. We have a charcoal grill for the bread at the garden and that's about it.

Any ideas? Martha Stuart suggests simply topping crostini with avocado, lemon juice and tomatoes. Not bad, and it will be my default. I often make a salad with avocados, oranges and pine nuts in a walnut oil/orange dressing. Perhaps I could top the avocado toast with orange zest, walnut oil and pine nuts?

 
And here is the menu for our tour. It is a bus trip through four community gardens with food, music

and wine tasting at each stop. I'm doing the hors d'oeuvres for the first stop:

Smashed Peas, Avocado & Asparagus Open-faced Slab.

When I was in NYC, Sandra & Heidi took me to the Plaza's Food Hall. Not sure which vendor we had lunch at, (edited: we ate at Tartinery) but I had an amazing open faced sandwich that was simply smashed peas, avocado slices and small 1" pieces of asparagus spears. There was also parmesan cheese shaved on top, but I'm betting you can find a suitable vegan substitute.

The bread was a dense country-style, sliced on the diagonal so it was quite long, but thin. Toasted to perfection...there is nothing I detest more than soggy toast.

Well...given a few moments I'm SURE I can come up with MORE THINGS I DETEST than just soggy toast, but you get my drift here.

In a lifetime spent avoiding green stuff, I was extremely pleased with this simple but flavorful dish.

And it's a HAND-HELD food that doesn't drip.

I love making avocado toast on locally made Italian white bread, toasted, then brushed with

browned butter, then top with lightly smashed avocado, add coarse sea salt. The above picture is stunning.

 
GORGEOUS menu, Joe. Really wonderful. Here is an idea for Avocado Toast:

Grilled bread slathered with cilantro pesto, then the avocado, then either slice or chopped tomato that has been marinated in something....

Or Grilled bread, olive salad (like muffuletta), avocado drizzled with roasted garlic oil

 
Avocado-Pesto

I had this for lunch today:

1 ripe tomato
1 ripe avocado
1/4 cup of fresh pesto (Fresh Basil, garlic, olive oil, and ParmReg)
Season to taste. I used Penzey's Adobo Seasoning, Chipotle Chili Powder, Onion Powder, S&P.

Dice tomato, mash avocado, mix all.

 
Thank you everyone! I'm now leaning toward Cathy's version with cilantro pesto, topped with cumin-

marinated tomatoes, in sauce a la Marilyn. It's gotta be simple and vegan, as I will not be doing the assembly.

All these ideas sound delicious though!

When we moved to our house we had two huge old avocado trees. We gave them away by the bushel. Now they are both gone. (they don't usually live beyond 45 years, and they were old when we moved in.) and I wish we still had some of those tons of avocados we gave away.

We have an itty bitty tree getting started now. Jacques says it will be for the next owner.

 
I was the happy/lucky recipient of a flat-rate box of J&J Avocadoes. Everyone

at work was ecstatic with the huge batch of guacamole I made.
