between grs and mimi's (the best forum in the history of the universe (and thanks for all the fish)), i've posted this recipe for a quintessential salad either 472 or 3 times (take your pick) and have received neither (with a long i) "ooh" nor "aah".
this is not my REC: so i can effuse and yet maintain my well-known modesty.
here it is.
Insalata di Pere e Parmagiana
Pears, Parmesan, Basil and Mint with Bitter Greens
from Islands in the Sun
Marlena Spieler
serves 4
Ingredients:
about 4 cups mixed bitter greens: frisee, radicchio, baby lettuces, etc.
3 tbs olive oil, or as desired
1 tbs red wine vinegar, or as desired
salt and coarsely ground black pepper
1/4 cup each thinly sliced fresh basil and mint leaves
1 ripe pear, thinly sliced
about 2 oz pungent cheese such as romano or pecorino, cut into shavings
Preparation:
Toss greens with olive oil and vinegar, and salt and pepper to taste. arrange on a serving platter and strew the top with mint , basil, pear and
cheese shavings. serve at once.
Variations:
if it's too early for fresh basil, i use lovage from the garden. it could be omitted. i used garden mint to play against the orange mint in the Pollo al Limono.
kindly respond or i'll be forced to commit hari (bless her missed posts on the difference between larding and barding (let alone her success in smuggling brown sugar into my larder)) kerry (curse his suicidal "jokes") again.
