Saw this idea online as a round cake and just loved it. A coworker is having a baby boy so I surprised her with this cake on Friday. Silver Palate carrot cake inside with tinted white chocolate cream cheese icing outside (bubbles are royal icing and the ducks are inedible plastic, but hopefully will float one day in Baby Oakley's bathtub.)
I bought a brand-new cake carrier for this and--of course--didn't measure the height ahead. Finished cake with Mommie Duck was 1" too high for the lid so she was yanked off the cake and carried into work separately with a bag of Royal icing to be reattached and rebubbled. Hopefully, Baby Duck will not be permanently scarred with Separation Issues.
