It took forever for me to figure out air bubble free royal icing and how to stencil (although still not every attempt works...).

Adorable! Have you tried the trick of straining the icing through a clean (duh!) nylon stocking?

And in the same vein (obviously not varicose) a lady in a middle eastern grocery store mimed how to line the carved wooden cookie mold with a clean (duh!) nylon to be able to press the ma'amoul cookie dough without using a lot of flour. She didn't speak English and I didn't speak...Farsi? Arabic? It doesn't matter...we were two women with a common goal and love: cookies!
