It was kind of like a dismantled nicoise salad. Presentation was beautiful and I wanted to share, especially with this heat.
If you can imagine a large, oval platter horizontal, looking from left to right:
first:
Grilled asparagus, with garlic, etc...all pointing out of the platter
next row (top to bottom)
Finely chopped red onions
Capers
Cut up Hard Boiled Eggs
Next Row (Top to bottomP
Cherry tomatoes; sliced in half
Very thinly sliced cucumbers
Last Row:
Grilled Chicken Strips
Cooked Bacon, in small pieces
Sliced Mushrooms
In between each section was arugula and spinach.
YUM! Was served with Ranch dressing on the side. I think a warm bacon dressing would have been great. Somewhere in this was chopped avocado...Can't recall where...
Lovely presentation and perfect for a lunch buffet.
