pork shoulder butt. Usually we see Boston. I don't know what happens to a butcher when he travels west but I have never seen this before. And it's huge.

This butcher cut 1/2 of this monster into steaks and left the other with bone in, whole.

Now, I have never cooked pork steaks before. They are about 1"thick and really large. They look juicy and fatty, just as a shoulder/butt should.

Any suggestions on cooking the steaks for tonight? Please?

 
My mom used to brown them quick in a little oil and then. . .

place them in a big ol' skillet, place some thick sliced onions on top and then barely cover the meat with water (the water was usually almost to the top side of the top layer of meat).

She would them simmer, covered for an hour or so and we always had them over boiled potatoes with their jackets on and each of us had a pork steak and them fork-mashed the tatoes with a little of the cooking juice on top to moisten. Sometimes she would thicken this juice to make a thin gravy.

This is something my dad always ate with applesauce.

 
I just received my issue of Cook's Illustrated, and there is a guide to buying pork

in it that is very helpful. They also have a recipe for roasted chicken breasts, perfect pork chops, brownies and potato salad. If you do not subscribe to Cook's, this is an issue you might want to buy at your local bookstore or market.

 
Thanks to the moms aned grandmas for the ideas. I used your idea last night

Richard. Like pork chops. I used a lot of time in the flour and through in fresh and dried mushrooms. H loved it just fried like that.

Tonight I'll use Mistral's plan and then finally on the weekend, I thought I would lay some sage leaves down on the slices and roll them up with some stuffing, perhaps a little apple, and either braise in white wine or roast.

This was a fun cut. We'd buy this again.

glad it worked out. sometimes the simplest things can just work out for the best. And this certainly brought back some memories. I haven't had these in years.
