Bacon And Double Cheeseburger Loaf

4 slices bacon

1 1/2 pounds lean ground chuck -- or ground round

1 cup fresh bread crumbs -- from firm white bread

1 cup shredded sharp Cheddar cheese -- (about 4 ounces) divided

1 large sweet onion -- such as Vidalia, chopped

2 tablespoons mayonnaise -- regular or low fat

2 tablespoons sweet pickle relish -- like india relish

2 teaspoons dry mustard

3/4 teaspoon salt

1/2 teaspoon freshly ground pepper

1 egg

1/4 cup ketchup

Preheat the oven to 350 degrees.

In a medium skillet, cook the bacon over medium heat until it is limp and some of the fat is rendered, 3 to 4 minutes. Remove the bacon from the skillet and reserve.

In a large mixing bowl, use your hands to gently but thoroughly mix together the meat, bread crumbs, 1/2 cup of the cheese, onion, mayonnaise, relish, mustard, salt, pepper, and egg. Pat the mixture into a shallow 2 quart baking pan. Spread the top of the loaf with ketchup, then lay the bacon strips over the ketchup.

Bake until the loaf is firm and the bacon is crisp, 45 to 50 minutes, sprinkling the top of the loaf with the remaining 1/2 cup cheese to melt during the last 5 to 10 minutes of baking. Internal temperature should be 155 degrees.

Let the meatloaf stand in the baking dish for 10 minutes, then cut into squares to serve.

NOTES : For leftovers, reheat slices in a microwave and serve on sesame buns with lettuce, tomato and ketchup.

 
I'm beginning to feel like that dog in the commercial getting a treat: BACon!

It came to me last night!

Maybe we need a separate section in T&T for bacony goodies. You know, you can tell I'm thinking about bacon too much. I want one of those old satin bowling jackets with The Baconettes on the back, rich brown with red writing? Saw this in a dream last night.. Maybe The Roost (my tiny pad) smelled too much like bacon last night!

 
You know, I am starting to worry about you guys? a chocolate obession might be o.k.? but to me bacon

always smells better than it tastes? Except for a rare BLT I just can't get it down, and even then the lettuce and tomato taste best--I love really good tomato sandwich.
As a cook, I don't like touching it a lot, it's almost like some who have an aversion to raw chicken?
Sorry, I have been told I am a very rare execption, just have never thought it was that good.

You're not alone Nan...good bacon is hard to find. I can only handle it crispy and non-greasy

...it has to have a clean meaty aroma so I rarely get it out at the local diners here.

On the other hand, I've had some nice organic versions from Whole Foods that I can make at home to my own specification. And ordered it whenever I found Nyman Ranch on the menu when we were in CA years back. If the restaurant was good enough to have that on the menu, they were smart enough to make it crispy when asked. That brand never tasted greasy.

I'm fairly sure there's a dictionary somewhere that has "heaven" defined as bacon and tomatoes.

 
I'm always suspicious of chicken sausages, do you know if that's true for them? Of course, my

aversion to the dark meat means I never buy them anyway. I know it's a silly thing, but I can't help it.
