Baked Beans The Sequel!

Last May I posted a recipe for baked beans which had been published in the Ottawa Citizen. I finally gathered all the ingredients this week to prepare the recipe which I planned to serve on Christmas Eve along with our traditional tourtiere.

The night before I left the beans soaking in water as per instructions. At 9:30 yesterday morning I began the preparations and by 10 Am the beans were in the oven. I had followed the instructions to a T. At 4 PM I tasted a bean which seemed to be swimming in far too watery a sauce and it was as hard as a bullet. I left the beans in the oven for another hour and at 5 PM the beans were still very hard. I cranked up the temperature to 300 F and by 8 PM was satisfied with the texture of the beans. Whew!

So, either the beans should be boiled for half an hour after soaking or the oven temperature should be raised to 300 F.

The beans are delicious and will make a wonderful addition to our Christmas Eve tradition.

I love putting these baroque baked bean creations into the oven, but I always need to bake them a lot longer than the recipes indicate. Baked beans take a long time.

Recipe sounds great!
