Baked Eggs with Mushrooms in Ham Crisps (Eggscellent for breakfast or brunch.)

I have made a lot of variations of this. I use black forest ham for the recipe and cut it thin

It is a great recipe an comes out so pretty. Sometimes it is tricky getting the whites done and yet keeping the yolk from overcooking. I don't always achieve perfection.

Actually, Linda Stradley is the busy one, it is a full time job for her running WCA...

I started out sending her a few recipes because I had a new camera and needed to learn to use it. So I started taking photos of what I cooked. It is fun and relaxing for me to edit the photos, and write the recipe results.

Anyone can contribute to her site. If you read under "reader submitted recipes" she has the guidelines. If one has the time, it is fun to do. I haven't been as active this past year. I think Linda is getting ready to add a few things to her site, one of which will be a print feature. Not sure what else.
