I made this for dinner the other day and it was really good!
Ingredients:
(Serves four)
8 flounder fillets (- or other thin white fish filets)
1 small green onion (or 3-4 spring onions)
1 orange, juice and zest
1 Tbsp honey
1 Tbsp soy sauce
freshly ground pepper and salt to taste
8 tooth sticks
Preheat oven to 350F
Sprinkle a little salt and pepper on the fish fillets.
Finely chop the green onion, and spread the onion over the fillets. Gently roll up the fillets - with the onion, salt and pepper on the inside - and set with tooth sticks.
Place the fillets with the side up in a greased (I used canola oil for this) ovenproof dish.
Blend together the orange juice, orange zest, honey and soy sauce, and pour evenly over the rolled fish.
Sprinkle with a little salt ( the amount will depend on how salty your soy sauce is. I don't care much for salt, but this dish needs it).
Cover with aluminum foil and bake for 15 minutes or until done.
I served this dish with brown rice and steamed broccoli florets and carrots (- sliced).
