Baked Onion Rings

Made these last night and they were delicious

Baked Onion Rings

1 1/2 cups corn flakes

1/2 cup dried bread crumbs

1 large egg

1/2 cup buttermilk

1/4 cup A/P flour

1/8 tsp cayenne pepper

coarse salt and pepper

1 medium/large sweet onion (Vidalia)quartered crosswise and broken into rings ( discard small center rings

2 Tab olive oil - I used a bit more

Preheat oven to 450. In food processor, pulse cornflakes and breadrumbs until fine crumbs form. Transfer to medium bowl. In another bowl, whisk egg, buttermilk, flour, cayenne pepper and season with salt & pepper.

Dip onion rings in egg mixture (letting excess drip off) and dredge in cornflake mixture; place on a large plate. Pour oil onto a rimmed baking sheet. Place in oven and heat for 2 minutes. Remove and tilt to coat evenly. Arrange onion rings on sheet. Bake turning once until onion rings are golden brown, about 16 minutes. Season with salt.

 
These sound good and I bet that recipe would work with other veggies too.

Maybe sliced zucchini, bell pepper rings, potato slices, butterflied shrimp, chicken tenders, the list goes on. Thanks for posting this. I will definitely give it a try. Oooh, what about adding some chipotle to the buttermilk or the egg mixture? Yum!

 
I think you're on to something. I added just the 1/8 tsp of cayenne

and you couldn't taste any heat so you might want to bump it up or like you said add some chipolte. Yum
