Baking questions for Alice Medrich: Answered!

Traca! Wow! I'm sooo happy! It's as good as meeting her in person!

But better, of course, because if I met her in person, I'd just be so starstruck, that I wouldn't even get a cohesive question out of my mouth smileys/smile.gif

I love the answer about the butter leakage! I've never heard that you have to emulsify the flour into the butter/chocolate mixture. I always thought you have to stir as little as possible so you don't activate the glutens in the flour! I'm simply amazed by this answer. I've never heard/read that anywhere before.

Thank you, thank you, thank you.

Since I'm blocked from posting at Traca's blog (thanks, work)...here what I

would have posted if I could:

Alice,

Thank you for solving one of my culinary mysteries. I've just placed an order for "Bittersweet" from Amazon and you've just been elevated to Angel Status.

Traca,

Thank you for being our "one degree of separation" from Alice, Goddess of Chocolate.

Sandi, that totally happened to me! I met Alice at this party in 2007

I could barely speak! Then it took me over a year to work up the nerve to contact her for an interview (and 4+ months to actually type it up -- an hour interview usually takes me 4 -5 hours of typing the dictation)

So from December 2007 to January 2009... LOL! Here's the interview: http://seattletallpoppy.blogspot.com/2009/01/interview-with-first-lady-of-chocolate.html

She'll be here in Seattle in December and I've got an interview scheduled with her then. I've planned a visit to my favorite bakery so it will be a little more interactive. smileys/smile.gif I still approach her with a deep reverence....Wonderful woman. Truly wonderful.
