Baking Withdrawal

I may need to go to a treatment facility. I baked and baked and baked over the holidays.I used over 10 pounds of butter. I made 8 batches of Penny's sugar cookies just to name one. Friends and family went NUTs over them. I did a deep cleaning of my kitchen yesterday and packed away my colored sugars, pastry cloths, cookie press, etc. *Sigh* I LOVE holiday baking.

although DH is happy to have a mess-free kitchen again. I can tear up a kitchen in no time.

And I made a "Best Chocolate Cake You Ever Put in Your Mouth" cake last night

because I had leftover coffee and because it's my birthday. woohoo. I'll take it to work tomorrow though because donut day is today at work and I never compete with the donuts. Here is the recipe---very much like Texas Sheet Cake.

1 cup water(I use coffee)
2 sticks butter
6T cocoa powder(I used a bit more, like 1/3c and some of it was the new Dark from Hershey)
dash salt
heat in saucepan or microwave till hot to melt the butter.
Add 2 cups sugar(I use 1 1/2c) and stir well. Add 2 cups flour, 1 tsp baking soda, 1 tsp vanilla and 2 eggs. Mix everything till smooth with whisk and pour into buttered 9X13 pan. Bake at 400 for 20 minutes.

When cake comes out of oven, make frosting: melt 1 stick butter(I use 3/4 stick), 5T coffee dash salt, 1tsp vanilla, and 6T cocoa all together in a bowl. Add 1 lb box of confectioner's sugar and stir till smooth and yummy. Add 1c chopped pecans if the mood strikes. Pour over warm cake. Heavenly.

 
Yes, I believe they would work fine if you made them a bit thick.

they are a bit softer than other sugar cookies, but not too soft. I believe the original "Penny" makes these to sell, so I bet she makes some on sticks too.

 
It's more "spongy" than a brownie. Fast and easy though. sometimes I add some buttermilk

if I have it. Makes it a bit richer.
