Whole wheat would give you a little heavier end result

I haven't used it much myself, but I don't think it would be too bad.

 
The only place I've run across pastry flour is King Arthur mail order - is this where you purchased

Everything is limited up here so when I am down the hill I tend to pick stuff up when I see it, whether I need it or not. I have ordered a ton of stuff from King Arthur but not the flours as I can get those at Trader Joes.

Cake flour would probably work, tho.

 
I think I have seen Arrowhead Mills carries a pastry flour at the local Frye's Market - I actually

have 3 tubs of "mystery" flour in my pantry.
They are cake flour, pastry flour and white whole wheat - my husband so nicely put them away as I as hunting down a sharpie to label the canister's....So, I think I will do some experimenting to figure out which is which but just haven't wanted to waste other ingredients!
Thanks desertjean - that cake recipe really looks great. I made the Whimsical Bakehouse Banana Cake last weekend to try and it was very good, but it was made with only brown sugar so it had a different taste. She uses a bavarian cream filling and pours chocolate ganache over the top. It was really good!

 
I was just in Whole Foods and they had both Organic Pastry Flour and Whole Wheat Pastry Flour.

Now I haven't a clue which one I have.

 
Pittsburgh and food stores

We finally have a Trader Joe's, which I love, and so do the siblings. And just a few blocks away is our Whole Foods. Needless to say, when I am able to go to them, I come home broke. MI buy my KA flour there, even though Giant Eagle (grocery chain) carries their products. Somehow, I just trust these places more. OH, and FINALLY, I got to have Tri- tip, courtesy of Joe's and skirt steaks...PA is always last to get new things or things other states have enjoyed for a long time. (And espescially, in the area of buying liqueur, another story...)
