Banana prune muffins

I got myself a new pan for mini muffins the other day, and I just had to try it the minute I came home. I decided to make Banana prune muffins, and I was done baking and was about to put the recipe back in it's place when I realized that the recipe said 'Banana DATE muffins'...!

My head must have been somewhere else but they came out very nice and here's the recipe. Obviously, you can substitute dates with prunes.....

*makes 55 mini muffins*

2 cups flour

1 teaspoon baking powder

1/2 cup brown sugar

1 teaspoon vanilla extract

1 cup very ripe bananas (= 2 medium bananas)

1 cup prunes, seeded and chopped

3 eggs

1/3 cup vegetable oil (I used canola oil)

1/3 cup buttermilk

Set your oven to 425 degrees F.

Mix all the dry ingredients (flour and baking powder) in a bowl. In a separate bowl, mash the bananas and add eggs, vanilla, buttermilk, oil and mix well. Add the dry ingredients, mix well and then add the chopped prunes at the end.

Fill muffin cups 2/3 full, and bake in the middle of the oven for 15 minutes or until done.

OBS: These muffins are not overly sweet. I'd like to serve them with coffee for breakfast or for lunch. If you want to sweeten them up, dress them with cream cheese frosting.
