The ingredient list had "red wine" but the instructions say "add vinegar"...so I made it with 1/4 C vinegar (since there was no mention of reducing, as you would wine).
I thought the proportions were a little high on the acidic side, (1/4 C vinegar to 1 TBL oil) and it ended up WAY too tart as made.
However I still thought it had wonderful possibilities so I added 1/4 C honey and pureed 3/4 of the sauce (to try and pull out more of the dried cranberry sweetness). That made it too thick...spoonable thick and still a tad too sharp and bitey.
Next I scooped out a few TBL of sauce, added a TBL of water to thin, drizzled/whisked a bit more fruity olive oil to a thick dressing viscosity and finished with a sprinkle of cinnamon.
It was DELICIOUS!
I used one of the heads of the "petite lettuce" shown in the IMAGE link, shaved bosc pear, small chunks of Wensleydale cranberry cheese, and crispy bacon.
It was so good we're having it again tonight.
My question is: is the recipe correct as written? Should "vinegar" be added to the list of ingredients after "red wine"...or was it actually red wine I was supposed to use?
And are the proportions the same that you used?
