I remember this like it was yesterday!

The mead was incredibly light and was indeed like a fine champagne. It had just the right amount of fruit and ginger in it.

 
I'm making another batch this weekend.

I can't believe it has taken me this long. Now to wait for the 5-7 years it takes to ripen to perfection.
