Barkshack Ginger Mead

For those of you who home brew, this is an amazing recipe. I made this years ago and it took about 3 years to age after putting it in the bottles, but it just kept getting better and better. 10 years it was like a fine French champagne. Stirring up another batch and thought I'd share. I use cherries for the fruit.

I remember this like it was yesterday!

The mead was incredibly light and was indeed like a fine champagne. It had just the right amount of fruit and ginger in it.

I'm making another batch this weekend.

I can't believe it has taken me this long. Now to wait for the 5-7 years it takes to ripen to perfection.
