RECIPE:
ROASTED BEET SALAD WITH WATERCRESS, LENTILS, SOPRESSATA AND TALEGGIO

1 1/2 cups beets -- roasted

1 cup lentils, cooked

1 bunch watercress -- washed and spun dry

4 tablespoons extra virgin olive oil

3 tablespoons balsamic vinegar

salt and pepper to taste

4 small slices Italian country bread -- toasted and cooled

6 ounces Taleggio cheese -- or other soft pungent cheese such as Brie, Goat, etc.

1/4 pound Sopressata

In a large mixing bowl, toss beets, lentil, watercress with olive oil and balsamic vinegar and season to taste. Divide salad among 4 plates. Divide sopressata around base of each salad. Divide cheese over each of the four pieces of toast, and place in center on top of each salad and serve immediately.

BRAISED CABBAGE

1/4 cup peanut oil
1 medium red onion -- sliced
1 cup brown sugar
2 Granny Smith apples -- sliced
1/2 cup red wine vinegar
4 pounds red cabbage -- cut into julienne
2 cups red wine
2 cups orange juice
1 cinnamon stick
3 teaspoons ginger
Salt and pepper -- to taste

A few gold leaves for decoration -- (optional)

Preheat oven to 350 degrees F.

Heat a heavy casserole. Add peanut oil. Saute the red onion until translucent. Sprinkle in brown sugar and cook for a few minutes until it starts to caramelize. Add sliced apples and deglaze with the red wine vinegar. Bring to a boil. Add red wine and orange juice, cinnamon stick, ginger powder and salt and pepper. Simmer for 5 minutes.

Add red cabbage and continue to cook for about 10 minutes on top of the stove. Cover cabbage with foil and cook in 350 degree oven for about 45 minutes. Remove. Taste, and adjust seasoning, if necessary.

1 whole cabbage head -- cut into wedges
2 green peppers -- quartered
2 cucumbers -- halved
2 carrots -- cut into thirds
1 medium onion -- quartered
dressing:
6 garlic cloves (I use much more)
3/4 cup sugar
1 1/2 cups white vinegar
1/3 cup water
1/2 cup salad oil
1 tablespoon salt

Insert slicing disk: Slice cabbage, using firm pressure. Empty into mixing bowl as necessary. Slice peppers, using firm pressure. Add to cabbage. Slice cucumbers, using light pressure and add to vegetables. Wedge carrots into feed tube and slice, using firm pressure and add to vegetables.

Insert shredding disk: Grate onion and add to vegetables.

Insert steel blade: Turn machine on, drop garlic through feed tube and mince. Add remaining ingredients and whirl to blend. Place vegetables in large container. Pour liquied over and toss. Cover tightly.

Marinate overnight, turning vegetables several times.

 
OMG Charlie - THANKS! Wow now I can't decide

Definitely the Spicy Portugese Bowl - DD loves stuff like that so it'll be a way to work some greens into her diet. I have some great andouille sausage in the freezer. And I was thinking about doing something with beets and goat cheese so the Bobby Flay recipe looks like a definite. Still can't decide on the others but the Rigatoni with the cauliflower might be a must too.

Swisschard and Vegetable Crostata

Crostata Dough:
2 cups all-purpose flour -- plus some for kneading
1/2 cup extra virgin olive oil
1 teaspoon salt
1/3 cup water -- or as needed
Filling:
3 pounds Swiss chard
3 tablespoons extra virgin olive oil
2 cups leeks -- chopped, trimmed (white and light green parts only)
2 cups scallions -- chopped, trimmed (white and light green parts only)
2 tablespoons fresh marjoram -- basil or thyme (chopped)
Salt
Freshly ground black pepper
2 cups ricotta cheese -- preferably fresh
1 cup freshly grated Parmigiano-Reggiano cheese
3 large eggs
1/2 cup heavy cream
1 egg yolk -- beaten with a few drops of water or extra virgin olive oil, for the crust

To Make Crostata Dough:
Process the flour, oil and salt in a food processor until smooth, scraping down the sides of the work bowl once or twice. With the motor running, pour in enough water to make a smooth, very soft dough. Turn the dough out onto a lightly floured surface and knead, adding flour if the dough begins to stick to your hands, until the dough is very smooth and no streaks of flour or oil remain, about 1 minute. Wrap the dough with plastic wrap and let it rest 30 minutes at room temperature or up to one day in the refrigerator. Allow refrigerated dough to stand at room temperature 30 minutes before continuing.

To Make the Filling:
Trim the ends from the Swiss chard stems. Cut off and discard any wilted or yellow parts of the leaves. Strip the stems from the leaves and cut the stems into 1/2 inch thick slices. Cut the leaves lengthwise in half, then crosswise into 1/2 inch wide strips. Wash the leaves and stems thoroughly, then drain well.

In a large, heavy casserole, heat the olive oil over medium heat. Add the leeks and cook, stirring, until they are softened, about 8 minutes. Add the chard, scallions and marjoram and season lightly with salt and pepper. Adjust the level of heat to low and cook, stirring occasionally, until the vegetables are tender and most of the liquid has evaporated, about 20 minutes. Drain thoroughly and cool the mixture to room temperature.

Combine the ricotta, Parmigiano-Reggiano, eggs and cream in the bowl of an electric mixer. Mix at low speed until blended. Add the cooled vegetables and mix thoroughly at low speed. Season to taste with salt and pepper.

Preheat the oven to 375 degrees Fahrenheit. Lightly butter an 18- x 12-inch baking pan with sides about 1/2-inch high.

On a lightly floured surface, roll the dough out to a 22- x 16-inch rectangle. Flour the surface as necessary to prevent the dough from sticking. Fold the dough into quarters, center it over the prepared pan and unfold it. The dough should overlap all the sides by about 2 inches.

Pour the chard mixture into the dough-lined pan and smooth into an even layer. Fold the overhanging dough over the filling to form a two inch border on all sides. Brush the dough lightly with the egg yolk or olive oil. Bake until the filling is firm in the center and lightly brownded and the crust is deep golden brown, about 45 minutes. Cool the crostata about 30 minutes, cut into squares and serve warm.

Roasted Red &yellow Beets With Goat Cheese & Lemon-tarragon Vinaigrette

2 large red beets -- trimmed of all but 1-inch of greens
2 large yellow beets -- trimmed of all but 1-inch of greens
6 tablespoons olive oil -- divided
1/4 cup fresh lemon juice
1 tablespoon tarragon -- finely chopped
Salt and freshly ground pepper
1 pound arugula -- washed and dried
8 ounces soft goat cheese -- crumbled
1/4 cup pine nuts -- toasted

Preheat grill. Rub beets with 2 tablespoons of the olive oil and wrap separately in aluminum foil. Place on the grill over medium heat and let cook for 1 hour or until tender. Remove from foil and let cool slightly. Peel and cut into 1-inch pieces. Whisk together the olive oil, lemon juice and tarragon and season with salt and pepper.
Arrange the arugula on a platter, top with beets, goat cheese and drizzle with lemon vinaigrette. Sprinkle with pine nuts.

2 pounds zucchini -- peeled and cut into 1/4-inch thick slices
3 tablespoons olive oil
Salt and pepper
1 1/2 pounds baking potatoes
For Herb Sauce:
1/4 cup Italian parsley -- leaves only
1/4 cup capers -- preserved in wine vinegar, drained
1/2 tablespoon fresh tarragon leaves
1 extra large hard boiled egg
1 teaspoon anchovy paste
1 teaspoon Dijon mustard
2 tablespoons fresh lemon juice
1/2 cup olive oil
Salt and freshly ground black pepper

Preheat oven to 450 degrees.
In a shallow baking pan toss zucchini with 1 tablespoon oil and salt and pepper to taste and spread in one layer in pan. Roast until golden, about 10 to 15 minutes. Peel potatoes and cut crosswise into 1/4-inch thick slices. In a shallow baking pan toss potatoes with oil and salt and pepper to taste and spread in one layer in pan. Roast potatoes until golden, about 20 minutes. Potatoes may be roasted 8 hours ahead and kept covered at room temperature.
Make herb sauce:
Finely chop the parsley, capers, tarragon and hard boiled egg. Transfer to a medium sized bowl, and stir in remaining ingredients. Season with salt and pepper.
Arrange the zucchini and potato slices on a platter and drizzle with the herb sauce.

 
Meryl, why do you have to turn your computer off during a thunderstorm?

I have never heard of that, and use mine all the time during them. Is it an issue of a power surge or something? Thanks.

Baked Cheese Polenta With Swiss Chard

1 tablespoon olive oil
6 garlic cloves -- minced
8 cups chopped Swiss chard -- stems and leaves kept separate (up to 10 Cups)
The polenta:
butter -- for greasing dish, plus
1 tablespoon butter
2 cups 1% low-fat milk
1 1/2 cups water
1/2 teaspoon salt
1 cup cornmeal
3 tablespoons grated Parmesan cheese
1 cup partskim grated mozzarella cheese
1/3 cup sour cream

Heat the oil in a large skillet over medium heat. Add the garlic and cook 30 seconds, then stir in the Swiss chard stems. Pour in a few tablespoons of water and cover the pan. Cook the stems 2 minutes. Remove the cover, and mix in the Swiss chard leaves. Cover the pan again and cook until the leaves wilt, about 3 minutes. Toss occasionally. Remove the pan from the heat and let cool, uncovered.

To make the polenta preheat the oven to 400 degrees. Butter a 2 1/2quart shallow baking dish and set it nearby. Combine the milk, water, and salt in a mediumsize saucepan and bring to a boil. Reduce the heat to medium low and slowly drizzle in the cornmeal, whisking all the while with a wire whisk. Continue to cook and whisk the polenta until it is the consistency of mashed potatoes and tears away from the sides of the pan, about 5 minutes. Whisk in 2 tablespoons of the Parmesan cheese, the 1 tablespoon of butter, and the mozzarella cheese.

Spread half the polenta in the baking dish. Spoon on the Swiss chard and distribute it evenly. Drop on small spoonfuls of the sour cream and spread it with the back of a spoon. Spoon on the remaining polenta and spread it out. Sprinkle on the remaining tablespoon of Parmesan cheese. (The casserole may be prepared to this point and refrigerated up to 24 hours in advance. Bring to room temperature before baking.)

Bake the polenta for 20 to 25 minutes, or until golden on top and sizzling. Do not overcook it because you want to retain its creamy interior.

Spicy Portuguese Bowl

1 pound collard greens
1/2 pound chorizo -- or spicy sausage, cut into 1/2-inch-thick slices
3 cups chopped onion
6 garlic cloves -- chopped
4 16-ounce cans fat-free chicken broth
1 15-ounce can canned navy beans -- drained
1/4 teaspoon black pepper
4 cups fettucine -- (4 cups cooked)

Remove stems from collard greens. Wash and pat dry; cut crosswise into 1-inch-wide strips.

Cook the sausage in a large Dutch oven over medium heat until browned. Remove sausage from pan with a slotted spoon, reserving sausage drippings. Add onion and garlic to drippings in pan, and saute for 5 minutes or until tender. Add greens, sausage, and broth, and bring to a boil. Cover, reduce heat, and simmer 25 minutes or until greens are tender. Add beans and pepper, and cook 10 minutes. Place pasta in each of 6 large bowls, and top with broth mixture.

For the cucumbers: SALADE DE CONCOMBRES ET CHEVRE (CUCUMBER AND GOAT CHEESE SALAD)

SALADE DE CONCOMBRES ET CHEVRE (CUCUMBER AND GOAT CHEESE SALAD)

INGREDIENTS:

2 cucumbers, peeled and thinly sliced
1 large tomato, cored and coarsely cubed
1/4 lb (4 oz) goat cheese, crumbled
1 tsp Dijon mustard
1 Tbsp red wine vinegar
2 Tbsp water
salt and freshly ground black pepper, to taste
2 Tbsp olive oil (I use extra virgin)
2 Tbsp parsley, finely chopped (I use flat leaf)

DIRECTIONS:

1. In salad bowl, combine cucumbers, tomato, and goat cheese. (Or can add part of the goat cheese and save the rest to crumble over the top after tossing salad).

2. In mixing bowl, whisk together mustard, vinegar, water, salt and pepper, then slowly whisk in the olive oil. (Or blend all ingredients except oil in food processor, then slowly add olive oil with machine running).

3. Pour vinaigrette over salad and toss well. Sprinkle with parsley (and crumble over remaining goat cheese if you have some reserved), and serve. (I like to chill it before serving).

4 servings.

I ate at an Indian restaurant once and had this dish...it was wonderful

but the ones I have made at home were not as good. Meryl, what made you choose the third one down?
