Krautsalat mit Speck (Bavarian Style White Cabbage Salad with Bacon)

I thought sure I had posted this one but I couldn't find it. This is the Bavarian salad you'll be served with a lot of meals in Munich.

Bavarian Style White Cabbage Salad with Bacon
1 medium head of cabbage
1 onion
Salt
100 ml beef broth
6 tbls. wine vinegar
6 tbls. sunflower oil
pepper
1 tbls. caraway seeds
1 tbls. sugar
125 g. bacon

Wash, core and finely shred the cabbage. Dice the onion. Add to a large bowl. Generously salt the vegetables, then toss to coat and knead by hand to work the salt into the cabbage and start the brining process. Let cabbage sit for 1 hour.

Pour the cabbage into a colander to toss and drain away the excess brine. Return to the bowl.

Pour the hot broth over the cabbage. Make a dressing with the vinegar, oil, sugar, caraway, and pepper. Stir into the cabbage and mix well.

Allow the salad to sit for 1 hour to marinate before serving. In the meantime, dice the bacon and roast or fry it until crispy.

Just before serving, stir into the salad.

 
I have most all ingredients needed

We will have trouble finding a few though, Richard. Parsley root, celery root for instance. Never saw either of them on this island. Finding a parsnip will be iffy....

I make my own pickling spice mixture which is this and if you don't like it I can order what you like from Penzeys before you come:

PICKLING SPICE
2 T mustard seed
2 T whole allspice
2 T crushed Bay Leaves
2 T dill seed
2 tsp whole cloves
1 tsp ground ginger
2 star anise
2 T coriander seeds
2 T juniper berries
2 tsp mace
2 tsp ground cardamom
2 tsp dried red pepper flakes

Combine and store in airtight container.

 
You'd better bring the mulled wine spices with you

There is nothing even close to that here. No dried citrus peel, etc.

corrected. Don't worry about every ingredient, all will work if we have to leave out a few things. there are many ways and recipes to make these dishes. no problem.

 
OK, I have a...

bottle of Nürnberg Cherry Glühwein leftover from Christmas and depending on the weight of the luggage, I could tuck that in to use, then we could finish it off with dessert.

 
Wouldn't it be fun if all the prep and then the meal was streamed

on line for us all to enjoy? OK, I settle for photos....

 
Nice idea, Orchid. Cathy's kitchen is so spacious, I can just picture

everyone spread out here and there creating the various dishes. Oh to be a fly on the wall. smileys/wink.gif
