Bean Silly tonight, after I bean watching the inauguration all day!

Since Costco has *been* selling these great packages of green beans, and I have a package in the fridge, tonight is THE night.

To accompany my green chile jack buffalo burger here's what I'm making. What has been your favorites? smileys/bigsmile.gif

REC: Faux Fried Crispy Green Beans

2 cups fresh green beans, trimmed and tailed

3/4 cup panko bread crumbs

1 egg, beaten with 1 t H2O

1/2 t onion powder

1/2 t garlic powder

1/4 t salt

several grinds of black pepper

dash of chipotle powder

Olive oil

Preheat oven to 400 degrees. Cover a baking sheet with foil or a Silpat, drizzle with a little olive oil and coat well.

Blanch beans in boiling water until crisp tender, ~ 3-6 minutes. Drain and rinse with cold water until cool. Drain and dry them well.

Combine bread crumbs and seasonings. Coat beans with egg mixture then coat with crumb mixture.

Bake 10-15 minutes, turning once, until golden and crispy.

REC: Green Beans and Yellow Peppers in Lemon Tarragon Vinagrette

2 cups green beans, trimmed and tailed

1 yellow pepper, cored and sliced

1 large lemon, juiced and zested

1 T fresh tarragon, finely chopped

1 T Dijon mustard

1 t salt

few grinds of black pepper

1/3 c olive oil

A few sprinkles of Crumbs Yo!

Combine dressing ingredients in a jar and shake well. Pour over beans and peppers and serve at room temperature. Sprinkle with a little Crumbs Yo! if desired (and I do).

By the way, this is one of my favorite dressings ever, if you can find good tarragon which has been a challenge this month despite the recent heat wave. Another way I like to use it is with green beans, roasted corn and roasted artichoke hearts (roast corn at 400 with olive oil, S&P for 10 minutes or until starting to caramelize - roast artichokes hearts in same pan with olive oil, S&P for 15-20 minutes until edges begin to brown). The recipe is from "Once Upon A Tart..."

The burger is easy: TJ's buffalo burgers, pan fried, topped with Hatch mild green chiles and jack cheese, on a toasted slice of strong bread.

I may make a chipotle mayo for the green beans but then I might be lazy and just squirt lemon on them....

 
I'll have to try the faux beans... does that mean they "bean pretending to be green?!"

I usually dry-fry my bean, putting them into a dry skillet, frozen or fresh, and put a lid on 'em - turn down the heat to med-low and leave them for 10 min. Toss them around, re-cover, and cook a couple more minutes. Then turn the heat high, remove the lid, add sliced garlic and a little salt, then toss and stir until browned and done.
