Because I order the produce for our co-op, I may have about 15 bunches of cilantro as of tomorrow.

Because there was only a price difference of about $4 or $5 between a case and a half-case, I opted to buy the whole case, which is 30 bunches of cilantro. If I over order something, most members try and take up the slack so that I do not get stuck with it. I have a feeling that I will be getting at least 10 bunches tomorrow. Any ideas of the best way to preserve it. I use a lot of cilantro anyway, but it is usually in salsa or Mexican and Asian food. Any ideas would be greatly appreciated. Thanks!

 
Make cilantro pesto....I have lots of it frozen in my refer in Food Saver Bags

I take small scoops of it after processing, freeze on a cookie sheet, then vacuum and seal in Food Saver bags. I do the same with Basil Pesto.
I have cashew, cilantro pesto, lemon cilantro basil, a parsley, cilantro basil, all are wonderful in rice as a side dish to Mexican type dishes. Play with is using your favorite nuts and see how great it is.

 
Rec: Cilantro Chutney

You might could freeze this too:

1 bunch Dhaniya/Cilantro leaves, chopped
1 tsp jeera/cumin seeds
1-2 green chillies, chopped
1 tsp Amchur / dry mango powder
2 tsp lemon juice
2 garlic cloves or 1 tsp garlic paste
salt to taste
Method:

Grind all the above ingredients with no water to a smooth paste in a grinder. Adjust seasoning according to taste.

 
I've never made it but there is an Indian restaurant near where we work

and they always have this type chutney on the buffet. I like little spoonfuls of it on several of the items but they never have the names of the dishes on the containers. I'm sure that traditionally certain chutneys are served with certain dishes, but I don't know which go with which. I think it would also be nice with grilled meat or chicken.
