Beef eye of round and new 8 qt Instant Pot Duo

I am just washing it out and going to try plain pinto beans for the first test.

DH bought eye of round instead of chuck ("It had less fat"!) so I am wondering if eye of round will tenderize in the Instant Pot.

A quick search shows most recipes call for chuck which always makes a good pot roast.

 
I think you are right to be concerned if it will tenderize. SO I googled and found the

link below that is for an Instant Pot AND is to get an eye round rare to medium rare, using the pressure setting. It has an interesting method.

Then looking further there was a "pot roast" recipe and it cautioned to use a long low and slow method--as in the crockpot setting which I would also agree with.

 
Okay, so not the same, but....

I bought a boneless pork shoulder to make Al Pastor tacos - slice thin, marinate and grill. But when I cut off the string there were a bunch of fatty, gristly chunks. Not pleased! So I searched for someone in the Universe who had made Al Pastor in the oven with chunks for less than 3 hours cooktime. Searched! Finally, I found a recipe for sheet pan pork souvlaki where the author offered pork loin and shoulder interchangeably. Not the same meat smileys/wink.gif So I used her method and we were pleased with the resulting spicy pork chunks ready in 25 minutes. I'd definitely try the (linked) recipe Charley found for you! Your description of a pork shoulder is what it ususally is, which when cooked low and slow

makes for a delicious dish. A pork shoulder could be done in a pressure cooker for the same effect because of the fat (like the chuck roast). And in chunks it can be OK.
