Beef massaman redux--additions

Made that wonderful recipe last night using chicken instead of beef. Cooked it in a dutch oven in the oven for about and hour and a half. I served roasted cauliflower and naan with it. What we realized is that putting the cauliflower in the curry was absolutely delicious. I might even add peas next time (but at the last so they don't overcook).

The cauliflower addition is not too different from an Indian cauliflower (no meat) dish that I have made.

I keep going back to this recipe and really wanted to make it but, as we have eliminated red meat from our diet, I wondered if it would work with chicken. So glad you posted that you had made it with chicken sub. Will definitely tryit. Love the idea of the cauliflower!

 
Works great with chicken. I used some thighs and breasts. Just adjust the cooking time

'way down. I think you could make the sauce and use fish or shrimp although it might overwhelm them a bit, but this curry is mild and sweet. Great recipe.
